Ingredients:
2 large cucumbers, preferably English or Persian cucumbers
1 teaspoon of salt, plus more for seasoning
2 tablespoons of rice vinegar or white wine vinegar
1 tablespoon of honey or sugar
1/4 teaspoon of red pepper flakes (adjust to your spice preference)
1/4 cup of fresh mint leaves, chopped
1/4 cup of fresh cilantro, chopped
2 tablespoons of olive oil

Instructions:
Prepare the Cucumbers: Wash the cucumbers thoroughly and pat them dry. Trim off the ends. You can leave the cucumbers whole or cut them in half lengthwise, depending on your preference.
Smash and Salt: Place the cucumbers on a cutting board and, using the flat side of a chef’s knife or a meat tenderizer, gently smash them.
