Ingredients

For the Sweet Potato Base:

  • 3 large sweet potatoes, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Toppings:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican cheese blend
  • 1 cup cherry tomatoes, diced
  • 1 large avocado, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, thinly sliced (optional)
  • 1/4 cup fresh cilantro, chopped

For the Lime Crema:

  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1/4 teaspoon garlic powder
  • Pinch of salt

Instructions

Preparing the Sweet Potatoes:

  1. Preheat oven to 425°F (220°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, toss sweet potato slices with olive oil, chili powder, paprika, garlic powder, salt, and pepper until evenly coated.
  3. Arrange sweet potato slices in a single layer on prepared baking sheets, ensuring they don’t overlap.
  4. Bake for 20-25 minutes, flipping halfway through, until edges are crispy and potatoes are tender.

Making the Lime Crema:

  1. In a small bowl, whisk together sour cream, lime juice, garlic powder, and salt.
  2. Transfer to a squeeze bottle or small plastic bag with corner snipped (for drizzling). Set aside.

Assembly:

  1. Reduce oven temperature to 375°F (190°C).
  2. Transfer sweet potato slices to a single baking sheet, overlapping slightly if needed.
  3. Top with black beans and shredded cheese.
  4. Return to oven for 5-7 minutes, until cheese is melted and bubbly.

Final Touches:

  1. Remove from oven and immediately top with:
