Ingredients
For the cloud bread base:
- 3 large eggs, separated
- 3 tablespoons (85g) cream cheese, softened
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning
- Salt and pepper to taste
For the toppings:
- 1/3 cup marinara or pizza sauce
- 1 cup shredded mozzarella cheese
- Additional toppings of your choice (pepperoni, vegetables, herbs)
Instructions
Making the Cloud Bread Base:
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the egg yolks and cream cheese until smooth and well combined.
- In a separate large bowl, add the egg whites and cream of tartar. Using an electric mixer, beat until stiff peaks form (about 3-4 minutes).
- Gently fold the egg yolk mixture into the beaten egg whites, adding the garlic powder, Italian seasoning, salt, and pepper. Be careful not to deflate the egg whites too much.
- Spread the mixture into an 8-inch circle on the prepared baking sheet, making it slightly thicker around the edges.
- Bake for 25-30 minutes or until golden brown.
Making the Pizza:
- Remove the cloud bread from the oven and increase temperature to 400°F (200°C).
- Spread pizza sauce over the cloud bread, leaving a small border around the edges.
- Sprinkle with mozzarella cheese and add your chosen toppings.
- Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Let cool for 2-3 minutes before slicing and serving.
Note: Cloud bread pizza has a different texture than traditional pizza. The base is lighter and more delicate, so handle it carefully.
Storage: Best consumed immediately. Can be stored in an airtight container in the refrigerator for up to 2 days, but the texture may change.
